Fruitcake Recipe

1 lb. pkg. Radian Mix (Paradise) also called fruitcake mix

1 lb. seedless raisins (3 cups)        1 lb. seeded dates (3 cups)

8 oz. Paradise pineapple                4 oz. cherries

½ lb. (2cups) walnuts or pecans (or use some of both)                             

¼ cup honey (or light molasses)                                

¼ cup orange juice (already mixed) or dark fruit juice

1 cup butter                  ¼ cup brown sugar      4 eggs

2 cups sifted flour       ¼ cup baking soda       ¼ tsp. salt

1 tsp. cinnamon           ½ tsp. cloves and mace (1/2 of each)

Mix the fruits (diced and quartered, nuts, honey (or molasses and orange juice. Cream butter, gradually cream in sugar, beat in eggs, one at a time, beating each thoroughly.  Transfer to a large mixing bowl and add fruits, then sifted dry ingredients.  Mix together thoroughly.  Bake in 2 med. Loaf pans or 1 and ½ quart casseroles.  Decorate top with cherries and pecans.   Pans should be greased and lined with greased paper.  Bake in a slow (275 degree) oven about 2 and ½ hours with a pan of water on the bottom rack. (This is very important).  Remove from pans to cool on wire rack, but leave the wax paper on the cake.  Put orange juice on it for the first week, after that orange juice mixed with Frangelico or Amaretto liqueur or whatever you like.  Wrap in wax paper and white muslin towel (they work best), then store in a cool, dry and dark place.   I usually store in a roaster pan (it works great) 3-4 weeks curing time. 

This recipe has been in our family since the 1940’s.  It was given to my Mom (Adeline May) by her employer (Mrs. Turner).  Mrs. Turner and Mom would corresponded with each other every Christmas.  When Mrs. Turner could no longer write, she would dictate to her daughter and she would write letter for her.   An amazing friendship.
